Spiral pasta made with courgette is a great replacement for pasta and this utterly divine pesto spaghetti sauce recipe makes it even better – from nutritionist Alli Godbold
Serves: 4 small portions for a starter
Prep time: 10 minutes
Ingredients
- 2 Courgette
- 50 g of walnuts
- 2 tbsp of water
- 2 tbsp of Engevita powder
- 2 cloves of garlic
- Half a lemon
- 100 ml Olive oil
- 3 handfuls of Rocket
Steps
For the noodles
- Take the courgettes and run them through the inspiralizer
- Leave the skin on for all the available nutrients
For the sauce
- Put the rocket, walnuts, Engevita powder, 2 cloves of garlic in the food processor
- Juice lemon half over the food processor
- Turn the food processor on
- Drizzle the olive oil into the food processor as it runs
- When it is finished processing, add a pinch of sea salt
- Add a bit of fresh ground black pepper
- Stir the sauce through the spaghetti
- Put the spaghetti on a plate and top with sundried tomatoes
