#FoodieFriday time and in this week’s #LeanIn15 we have a Chicken Massaman Curry from Joe Wicks (The Body Coach) Looks delish!
Ingredients:
- Lucy Bee Coconut Oil
- Chicken Breast
- Red onion
- Fresh Chilli
- Aubergine
- Red peppers
- Broccoli
- Baby Corn
- Mange Tout
- Massaman Curry Paste
- Coconut Milk
- Cashew nuts
- Microwaveable Rice
Instructions:
- Add the Lucy Bee Coconut oil to a wok
- Add the Red onion and fresh chilli
- Add the chicken breast and fry for 2-3 mins before adding all the veg
- Use half a can of coconut milk
- Add tablespoon of massaman curry paste
- Microwave the rice
- Top with cashew nuts and enjoy!
